Recipe: Breakfast Banana Bars
Servings: 24 bars
- ½ cup Fiber One cereal
- ¾ cup mashed, very ripe bananas
- 2/3 cup sugar
- 1 teaspoon vanilla
- ½ cup low-fat sour cream
- 1 cup all-purpose flour
- 2 tablespoons margarine or butter softened
- ½ teaspoon baking soda
- 2 egg whites or ¼ cup fat-free, cholesterol-free egg
- ¼ teaspoon salt
Preheat the oven to 375 degrees. Spray a 9 x 9-inch square pan with cooking spray.
Crush Fiber One cereal
Beat sour cream, margarine, vanilla, and egg whites
Mix in sugar and crushed cereal
Beat in the flour, baking soda, and salt
Beat in the bananas and for 30 seconds
Spread into greased pan and bake for 18 minutes.
