Recipe: Curry Chicken Salad


Ingredients:

  • 3 cups cubed baked chicken

  • 1 ½ cups diced celery

  • 3 tablespoons lemon juice

  • 1 cup seedless green grapes

  • 1 cup nuts (walnuts, almonds, pecans)

  • 1 cup dried cranberries (could use any other dried fruit if desired)

  • 1 ½ teaspoon salt

  • 1 ½ teaspoon pepper

  • 1 tablespoon curry powder or dry mustard

  • ¼ cup skim milk

  • 1 cup fat-free mayonnaise


Directions:

  1. Cut baked chicken into bite-sized cubes.
  1. Mix the chicken, celery, and lemon juice together and let chill in the refrigerator for 1 hour.
  1. Add grapes, cranberries and nuts to the chilled chicken mixture.
  1. Combine the remaining ingredients and spices.
  1. Enjoy!
