#EatWellLiveWell: Strawberry Pecan Salad with Chicken

Strawberries are one of the most popular fruits consumed by Americans. Strawberries are delicious enough that you may feel guilty about eating them frequently, but strawberries are packed with powerful health benefits that shouldn't be ignored.

High in antioxidants and nutrients such as vitamins C, manganese, fiber, potassium, and folate, strawberries are a great addition to a healthy diet. These amazing nutrients can help people prevent heart attacks, strokes, cancer, high blood pressure, diabetes and depression.

A lesser known fact is that strawberries are packed with folate. Folate, which is a natural version of folic acid, is a very important nutrient to consume during pregnancy as it helps with fetal development. Folate produces erythrocytes, better know as red blood cells. The production of red blood cells helps prevent heart disease, cancer, and depression.

Recipe: Strawberry Pecan Salad with Chicken

Servings: 8


  • 2 large boneless, skinless chicken breasts, cubed

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinaigrette salad dressing

  • 1 bunch fresh spinach, rinsed and dried

  • 1 pint fresh strawberries, sliced

  • 4 ounces crumbled goat cheese

  • 1 (5 ounce) package candied pecans

  • 2 tablespoons olive oil

  • 2 tablespoons balsamic vinaigrette salad dressing


  1. Cook cubed chicken breast meat in a skillet with 2 tablespoons of olive oil and 2 tablespoons of balsamic vinaigrette over medium heat until meat is browned and cook through.

  2. Remove chicken from skillet once all juices are evaporated and let cool.

  3. Place your spinach in a salad bowl and toss in strawberries, candied pecans, and goat cheese. Add chicken and top with 2 tablespoons of olive oil and balsamic vinaigrette each and toss.

  4. Enjoy!
