Jo Cox, M.S., RD, LD, CDE
Jo is a graduate of the University of Wisconsin-Stout where she earned a Master's degree in food science and nutrition. She holds a Bachelor's degree in English from Berea College, Berea Kentucky. She is a Registered Dietitian (RD) with the Commission on Dietetic Registration and is licensed (LD) by the State of Iowa. She is a Certified Diabetes Educator (CDE) by the National Certification Board for Diabetes Educators. Jo's 25 years in the field have focused primarily on diabetes management and diabetes prevention with an a side of freelance nutrition writing.
Cindy Park received her secretarial diploma from Nettleton College in Sioux Falls. She has been the Program Assistant for the Diabetes Education Center for the past 11 years.
Teresa "Terri" Peiffer, RN, BSN, CDE
Terri has been a diabetes nurse educator at Iowa Methodist Medical Center for 23 years. Her experience in the diabetes field has encompassed inpatient education at the bedside, in-services for nursing staff, coordination of the Continuous Glucose Monitoring System (CGMS) program and day-to-day sessions with individuals impacted by Type 1, Type 2, and Gestational (pregnancy) Diabetes. Her reward comes from witnessing people achieve balance as knowledge, support and confidence outgrow fear and frustration.
Donna Starck, RD, LD, CDE
The focus of Donna's career as a dietitian has been diabetes education. Her career path has included positions in both hospital and clinic settings. Volunteer work in diabetes has offered a variety of enriching experiences which have included helping coordinate diabetes support groups, attending diabetes camp and participating in diabetes fundraising events. Donna attended Iowa State University and is a registered, licensed dietitian as well as a Certified Diabetes Educator.
